Icing or frosting is a way of display creativity and art as a baker. Honestly, to this date, I have never been able to frost a cake, cupcake or cookie impeccably. There’s a lack of finesse that I cant seem to power through. It requires great deal of patience which is not one of my many virtues. However, I do appreciate a perfectly decorated cookie especially during holiday season. It just adds a punch to all the festive celebrations.

Ingredients:
- 4 cups icing sugar
- 3 egg whites
- 1 tsp vanilla extract
Method:
- Whip the egg whites until frothy, add icing/confectioner’s sugar and whisk further to form the icing. For piping, the consistency ought to be soft and stiff.
- Pour into a piping bag and let your creativity flow.
Note 1: To adjust consistency, follow these tips while whisking. If your icing is too runny, add sugar 1 tbsp at a time. If its too stiff, add 1 tsp egg whites at a time. If your icing dries out, you can always add 1tsp water and whisk with for to revive it.
Note 2: If you’re unsure about your piping skills like me and still want pretty cookies, make a soft smooth icing, dunk one flat side of cookie into the icing and lift it up as is while simultaneously twirling the cookie. To enhance it further, add food coloring to your icing and swirl with a skewer or toothpick, then follow the process of dunk-lift-twirl.
