Nice creams

I am as crazy as a kid when it comes to ice creams. I mean, who isn’t? Its something I find really hard to resist. Who here is actively searching for a way to survive on icecream without dairy consequences? **Raises both hands**
Few days ago I came across some popular blogs on Instagram and got to know the concept of “Nice cream”. Its basically frozen bananas blended and frozen again to get a smooth gelato-like texture and consistency.

I eat the nicecream as is topped with fresh fruits or nuts or seeds. I also put a scoop or two on my smoothie bowl and overnight oats and chia pudding.

Some people use coconut oil in their nice cream, I don’t find it very appealing so I’ve left it out. You can go ahead and try it for yourself. Just like a smoothie, this recipe is very flexible when it comes to flavours. What makes it so versatile is the frozen bananas that act as the canvas. They just provide the sweetness and the icecream texture. You can experiment with a ton of fruits, powders like acai, matcha, spirulina, cocoa, different nut butters. Mostly I use almond butter.

Here’s a basic recipe and some variations of it. Hope you guys try it out. I would love nothing more than hearing from you all about your food experiments.

Basic Nice Cream Recipe

Ingredients:
2 ripe frozen bananas
1 tsp sweetener of your choice
1 tbsp nut butter
1-2 tsp almond milk (if needed, for blending)
Method:
1. Put everything in a food processor/powerful blender and blend till smooth. Food processors require less liquids to help the blending process hence my suggestion is to use a food processor for this. You can also use a powerful blender on cold setting.
2. Put the mixture in a loaf pan or air tight container and freeze for an hour or 2.
3. Scoop and serve with toppings like fresh fruits, nuts, seeds, chocolate chips etc.


Chocolate Nice Cream Recipe

1 tbsp cocoa powder
1 tsp sweetener
1-2 tsp almond milk (if needed, for blending)
Method:
1. Put everything in a food processor and blend till smooth. Food processors require less liquids to help the blending process hence my suggestion is to use a food processor for this. You can also use a powerful blender on cold setting.
2. Put the mixture in a loaf pan or air tight container and freeze for an hour or 2.
3. Scoop and serve with chocolate chips etc.


Avococoa Nice Cream Recipe

Ingredients:

2. Put the mixture in a loaf pan or air tight container and freeze for an hour or 2.
3. Scoop and serve with cacao nibs or fresh berries etc.
